The gala brings together businesses, small and large, media and the public to celebrate excellence. The gala was designed by Calgarians for Calgarians rewarding and recognizing businesses for distinction in a variety of industries and categories. Winners are nominated and selected by Calgarians in an assortment of categories ranging from Customer Service and Entertainment to Arts and Culture to Heart of the New West.
Proceeds from this gala benefit the Green Learning Foundation (GLF), a registered charitable organization devoted to children’s education. White tea is very different from other types of tea such as green or black tea. White tea leaves are plucked from a special varietal tea bush called Narcissus or chaicha bushes. Secondly the leaves are not steamed or pan-fired (the process used in green teas) or fermented and fired (the process used in black tea). The leaves are naturally withered and dried in the sun. If mechanical drying is required it is a baking process at temperatures less that 40’C. Thirdly only special ‘two leaves and a bud’ are selected. These leaves must show a very light green almost gray white color and be ideally be covered with velvet peach fuzz down. Sowmee is one of the lower grades of white tea, but despite this it has the properties attributed to white teas. The leaves for Sowmee are plucked during late April, May and June. The lack of processing and hand selection is evident in the leaf appearance of Sowmee as it is somewhat mixed and tending flaky and flat. This Sowmee has a more pronounced taste profile - almost oolong tea-like. Many white tea drinkers prefer this cup in that there is a ‘substance’ to the taste compared to the delicate nuances of other white teas.
Researchers at the Linus Pauling Institute in Oregon tested white teas on selected rats to test for the ability of white tea to inhibit natural mutations in bacteria and to protect them from colon cancer. Interestingly, white teas were found to be more effective than green tea in inhibiting the early stages of cancer but researchers pointed out that their study was on rats and the effects should not be extrapolated to humans. The researchers also found that white tea contains higher levels of caffeine compared to green tea brewed under the same conditions. They suggested that this could occur because white tea oxidizes during withering whereas in green tea the oxidation process is stopped early in the tea making process by steaming or panfiring.
The western cosmetic industry is beginning to make a white tea extract to be worn underneath your moisturizer. The reason is that it seems white tea has been shown to be more effective in mopping up free radicals that cause skin to sag. One tea expert has been quoted as saying ‘unlike black or green tea, it isn’t rolled or steamed, this preserves its antioxidant properties’.

Hot tea brewing method: When preparing by the cup, this tea can be used repeatedly (à la chinoise) - about 3 times. The secret is to use water that is about 180°F or 90°C. Place 1-2 teaspoons of leaves in your cup and let the tea steep for 3 minutes. Then begin enjoying a cup of enchantment - do not remove the leaves from the cup. Once the water level is low - add more water, and so on - until the tea flavor is exhausted. Milk or sugar

Free From Fear

First of all I would like to wish you a wonderful, blissful 2010! May it be nothing like you expected, yet full of wonder and miracles! May you live each moment to the fullest with the freshness and curiosity of a child.
This is month three at Nithyananda’s ashram, I can’t believe how fast the time flies by. Like every morning, this morning we started off with a Nithya yoga session. During this session I had a major break through that I would like to share with you. My wish is that it will be inspiring for you to realize you can do anything!
First a little bit of history about me. In 1996 I had a car accident which resulted in me having a whiplash. My neck hurt tremendously. In spite of different forms of healing, it had never fully recovered. Last year I ended up in the hospital with a bulged disc in my spine, I was in so much pain, it was unreal. Even though I did recover from that mostly, my back and leg still hurt, sometimes a little bit and sometimes quite a bit. But, like I said in the beginning of the paragraph, that was a little bit of history about me.
Now, a bit more about my yoga session this morning. Even though we do not do rigorous yoga postures, there are a lot of postures that really stretch me. (no pun intended) Yoga practice is so much more then just body movement. It is so beautiful as it is a way to bring awareness in to our body, bringing awareness to our inner processes. What I noticed was whenever the postures were explained, immediately resistance and inner chatter would come up: “Oh no, I can never do that, I am not flexible enough” and so on. Then, when it comes down to performing the posture, the inner chatter continues with on top of that a huge fear. I noticed how, not only in the yoga practice but for years, I have been bracing my body, especially my neck and back, out of protection. I was not able to just relax and go with the posture to see what would happen, as my body remembered the pain from the past. It was bracing itself with tension for something that hadn’t even happened yet, based on memories.
This morning, there was a tremendous shift for me. The posture we were about to do was a backward bend where you sit on your heels, back bent backward with the top of your head touching the floor. Somehow for the first time I’ve come here, I was able to just stay in the silent space within, relax into the posture without any of those disturbing, limiting thoughts and do it. I just relaxed and did it, after having tried this for many times over the last few months but never been able to succeed. To my amazement and joy I was able to just do it, without any pain at all, not even afterwards. Pretty amazing considering that not even a year ago I was in bed for about a month not being able to move at all, and in the hospital on morphine because of a bulged disc in my lower back!
The realization that came was how we go about our lives, bracing ourselves for what is to come, based on past memories. When we live this way, we miss out on life!!! While we are in fear we cannot see what we are capable of doing, how much we can enjoy, that all we have to do is to relax into the fear. Notice it, relax, and do it anyway. The fear and resistance will simply melt away, making way for the inner intelligence to move through and do what it needs to do to bring health and well being back into your life. Whatever area that might be. I used my yoga practice as an example, but we can apply this in any area of our lives. All we need is some awareness, that’s all. Just notice when fear or resistance comes up, feel it (do not suppress it, just allow the experience to be what it is), relax into it and do it anyway, in spite of the fear. With no expectations, just for the sake of doing it. And then watch our lives unfold! We are able to do anything, it is only the fear that is holding us back. By doing this, we are setting ourselves free, taking steps to lead a joyful, conflict free life!

This is a month to grow and explore, especially in areas concerning your creative potential. You will also feel like you want to have more fun, entertainment & sports are prominent. You will have the energy to engage in more physical activities. This is a good month for you to lighten up and remember that all work and no play makes for a dull life!
Gemini
Time to roll up those sleeves and get to work! The time of procrastinating is done, projects & work that have been put off now come back to get done! Don’t be surprised if there are breakdowns in the home front that require repair work. This is a month for you to remember where your responsibilities are, be a leader not a follower.
Cancer
Socializing is a key word for you this month. Expect unexpected or last minute invitations. Perhaps someone you haven’t heard from in while says hello! You’re diplomatic skills within personal relationships may also be tested. For some, personal relationships could go through a bit of a shakeup, but only where it’s needed.
Leo
You are in a creative & artistic period. This is a good month for you to escape from the world for awhile & entertain yourself. Go out and find a good movie, go to a play, a museum, a sports game or anything that reminds you about the importance of play. This is also a time to believe in yourself & your potential.
Virgo
Be a leader this month especially within your home. You may have to find the courage to emotionally express yourself to someone who is stirring up personal insecurities within you. This is also a time to change or renovate something within your home. Find a space within your abode that needs a good cleaning or simply needs a new look!
Libra
This is a good time to comfort & pleasure yourself, so don’t feel bad if you seem to be eating slightly more cheesecake or comfort foods than usual. Find comfort & pleasure through entertainment & play. The urge to gamble & play games of chance may beckon, but only those who budget will win! Learn to value and appreciate what you have and not what you want.
Scorpio
Throw a party within your home or don’t be surprised if you simply get invited more often to other people’s homes this month. Expect more people to come in and out of your home; the phone may be ringing more than usual! This is also a time to communicate or express your feelings more, if not to someone then to yourself, a good time for journaling.
Sagittarius
Fixing this & repairing that, don’t be surprised if there are a few breakdowns within your home or personal property, then again this could be a good time to simply do some badly needed cleaning in certain areas of the home. On a personal note maybe you find yourself overanalyzing your feelings a little bit too much lately, that’s okay just remember that feelings can’t be understood logically!
Capricorn
Boost your confidence this month by working out more. A healthy body equals a healthy mind as the old saying goes! This is a good month for you to change something about your appearance or how you express yourself. Get some new snazzy clothes, change your hairstyle or simply go out and do something that you normally wouldn’t do, in other words find an escape from the routine.
Aquarius
Take the time to focus on your health, a balanced diet & exercise routine will do you wonders! This is also a good to time to repair or heal broken relationships or parts of a relationship that need healing. Find the beauty in the work that you do. You may have to be a little more diplomatic in your work environment.
Pisces
You need to balance your work with your health. Don’t overdo things too much, balance & patience is key. You may also feel like you have to fix everybody’s problems, just remember to balance others needs with your own. You may find yourself spending more time with work related colleagues.
